  • Tasty Tuesday

    Thiry minute meal preparations abound, but that doesnt stop me from sharing mine.

    On the way home from the office at 5:45p, I picked up some fresh mahi mahi (which was on sale) from Publix.  Impulsively, I grabbed  a package of  in-store, *prepared* portabella mushrooms.  There were stuffed with crabmeat and topped with a slice of tomato and a few strips of mozzarella.  Cruising towards checkout, I tossed some fresh broccoli into the cart and was out of the store in fifteen minutes.

    When I walked through the back door at home, I immediately turned on the oven for preheating and started the kettle for DH’s sweet tea.  I poured myelf a glass of Chardonnay and unpacked the groceries. 

    The fish landed in a pyrex baking dish. I squeezed the juice of a fresh lemon over it, sprinkled a little lemon pepper and dotted it with real butter.  In a 425 degree oven I simultaneously baked the fish and the mushrooms for 25 minutes.  The broccoli also found its way into a pyrex dish which I covered with saran wrap.  I waited to steam it in the microwave for four minutes while the fish cooled on the counter.

    Dinner was served at 7 o’clock.

  • Not often enough!  When eating out I try to order grilled salmon, and from time to time I make tuna salad sandwiches at home.  Steve isn’t fond of fish, so it limits me.  (And I love catfish, but haven’t eaten it in years out of deference to Steve.)

  • Does cod liver oil count?  We have that every day.

    My cooking is much more downhome than yours is — we have salmon patties almost every week because everyone likes them so well, and tuna casserole once or twice a month, fried catfish and hush puppies when my folks visit (four or five times a year).  My baked fish never turns out very well so I only attempt it a couple of times a year, which is probably the opposite of what I ought to do.  I make caesar salad dressing with anchovies ever so often, and I’ve even gone so far as to buy a tin of herring just to see what it’s like, only I didn’t use it quickly enough to please my budding cook of a daughter and she made broth out of it to flavor a Thai dish she wanted to try.  Also we use naturally fermented fish sauce in soup fairly regularly when it needs a little salt or something at the table — actually, I intentionally undersalt soup for this purpose — so that’s another once or twice a week, or more in winter.

    Before writing this out I would’ve said that we don’t eat fish very often!

    What kind of fish is mahi mahi?  Warm or cold water?  Oily?  I’m seeing talipia in the stores a lot, another fish I’ve never heard of.  Have you ever tried it?

  • Mahi Mahi is a mild, white fish and the term is Hawaiian.  I like salmon, grouper, talapia, and swordfish for starters.  We dont have it at home as often as I would like, because it is not a favorite of DH.  Consequently, I order it often when dining out.

    Tunafish…well, we have that all the time…from a can.  But fresh?  I love to marinate it in a teriyaki sauce and grill it.

    Basically, I appreciate variety :)

  • Yum, that sounds good! We are salmon freaks here, and my favorite recipe is to marinate a fillet in a wine-ginger marinade and put it on a bed of fresh spinach and red pepper slivers. It looks fantastic and tastes even better. I also put salmon in a quiche recipe, and use it from a can in a salmon patty recipe with cucumber yogurt dressing. Thanks for stopping by!

  • Yum! Sounds totally delicious. I don’t eat fish as often as I should, mainly because I never get it the way I want it. I think I will try doing it the way you describe. I often order it when I eat out and sometimes it is wonderful and often not. That depends on the restaurant of course.

  • Glenda served fish last night here the the KKG house….it was not very well received. I believe it was tilapia, but that is the sort of fish flavor that needs hiding. If done well, I think it tastes good blackened. I’m jealous of your Mahi-Mahi….maybe we can have fish one night next week? :)

  • Fish is truly a “fast food”. I like to keep it on hand for that reason! We like salmon best and have it once every 10 days or so. Thankfully, all my children love fish, too. My youngest likes canned kipper fish on crackers for an afternoon snack. I’m glad she eats healthy snacks, but yech! The lingering smell is awful.

  • Oo-la-la! We had steelhead last night for dinner. Chris had been fishing and brought three home for us. 11 of us ate two of the fish and the meat from the third is going to end up on a gourmet pizza made my brother Dan.

    I’ve only had Mahi-Mahi in restaurants. I’ll have to check on its availability in our area.

  • We have lovely rainbow trout here in North Georgia, Carol, which I order mainly in restaurants :)
