Easter Dessert
Carrot Cake is a perennial favorite and I’m guessing that most homemakers have a recipe for one.
DD#3 was home from Hillsdale College for Spring Break and she blessed us with her culinary skills. This year’s recipe was from the Epicurious website, but there was one minor modification which makes the recipe hers and which will forever be included in my future baking of carrot cakes.
If you’re feeling up to it, check back after dinner because that’s when I’ll reveal the special ingredient.
And for the sake of posterity, I’m detailing the menu ~ our traditional fare for this holiday meal.
Roasted Lamb – DD#3 concocted a mustard-based coating which flavored the meat
Eggplant Casserole – I followed my standard squash casserole recipe, but substituted eggplant
Steamed Asparagus
Steamed Sweet Orange Peppers
Croissants – purchased at KrogerLast but not least, kudos go to DD#4 who cleaned up after the meal, making the whole afternoon go more smoothly.

And yes, I tried a couple of things in Photoshop to help reduce the glare from the bay windows; and so, I appreciate your compliment because I wasnt sure that it was better than the original. Over time I have tried to learn some tricks from Donna at Quiet Life, but I cant keep up.

They hardly let me in the kitchen anymore. It’s funny you mention Epicurious. My girls look at food blogs all the time for ideas, and they go there sometimes, but it’s not their favorite. Steve got an iPad this weekend, and he installed an app for Epicurious, and my daughter was transfixed looking through recipes for a LONG time on the iPad. @magistramater - Whoops! Forgot to add that last night. Okay, here’s the story. The raisins were old, i.e. hard and stuck together and I offered to buy some more, but DD declined…. said she’d just plump them up with a little rum. Did I have any? So, that’s it. We soaked the raisins just enough to enliven them, but not so much as to prompt a comment about the alcohol content.
@buriedtreasure - Loving everybody’s menus… and reading about their helpers. Additionally, I learned a cake icing trick from DD#3 this past weekend. It’s called a crumb coating and created a more professional presentation.

Mike and 19yos butchered the kid on Friday, with 11yod assisting. 20yod made the lemon cream pies, did most of the work on the dressing, and got the roast started. MIL made the salad. I made the gravy, the maple-apple glaze, and the asparagus. 17yod spent the afternoon hiding Easter eggs (that we had dyed from plants and spices on the previous day) for the younger kids and keeping them occupied with fun and chocolate while the rest of us cooked.It was a lovely weekend.
@MerrilySpinning - Kelly, that menu sounds scrumptious especially the fresh kid! I’m curious about your lemon cream pies. I have a recipe for what I call a lemon ice-box pie which means there’s no cooking required. It’s eggs, lemon juice, sweetened condensed milk, and ? Is that similar? If not, when you have a moment, would you consider sharing your recipe on your blog?
Katherine is out in the garden now, but I’ll ask her for the recipe and post it later today. It seems like she cooks the yolks a little, I think the whites are not used, and it calls for sour cream. It’s very rich and a narrow slice is usually all that’s needed — it’s so satisfying.
